INGREDIENTS

  • 8 large shrimp

  • Non-stick cooking spray

  • 2 tsp fresh cilantro

  • 2 tsp lime juice

  • 1 yellow squash, sliced

  • 1 cup Swiss chard

  • 1/4 cup cauliflower rice or wild rice

DIRECTIONS

1.    Slice zucchini and Swiss chard.

2.    Spray a pan with non-stick spray and cook shrimp over medium heat for 3-4 minutes, season with cilantro and lime juice.

3.    Steam squash and chard for 5-7 minutes. Cook wild rice according to package or cook shredded cauliflower until soft. Dish up and joy!
