I'm sure you're aware of cauliflower pizza crust but did you know you could also use cauliflower to replace rice. Cauliflower rice is a healthy alternative to traditional white rice and extremely easy to make. Instead of getting takeout this weekend, try whipping up this delicious, lesser calorie fried rice bowl!

SINGLE SERVING

INGREDIENTS

  • 3 cups raw cauliflower florets

  • 1 garlic clove, minced

  • 2 teaspoons sesame oil

  • 1/8 teaspoon sea salt

  • 1/8 teaspoon black pepper

  • 1/2 cup frozen peas

  • 1/2 cup shredded carrot

  • 2 eggs, beaten

  • 2 tablespoons almonds, chopped

  • 1 green onion, chopped

DIRECTIONS

  1. Pulse the cauliflower in a food processor or blender (I find that using a food processor is easier).

  2. Sauté garlic with the sesame oil in a skillet over medium-high heat (30 seconds).

  3. Add cauliflower, salt, pepper, and cook for 1 minute.

  4. Add peas and carrots and cook for another 3-5 minutes until everything is heated and cauliflower is tender.

  5. Scoop vegetables to the side of the pan and scramble eggs on the empty side.

  6. Stir veggies and scrambled eggs together. Place mixture in a bowl, top with almonds and green onion, and serve.
