  • 2 teaspoons honey

  • 1 teaspoon extra-virgin olive oil

  • 1 teaspoon ground turmeric

  • 1/8 teaspoon sea salt

  • 1/8 teaspoon black pepper

  • 2 chicken breasts (about 4 ounces each)

  • 1/2 cup cooked brown rice

  • 2 tablespoons lime juice

  • 2 tablespoons fresh cilantro, chopped

  • 2 tablespoons cashews, chopped

  • 1 1/2 cups steamed broccoli


  1. Preheat oven to 400 degrees Fahrenheit.

  2. Mix together honey, oil, turmeric, salt, and pepper.

  3. Line a baking sheet with parchment paper and then place chicken on the paper.

  4. Spread honey-turmeric mixture on the top of the chicken and bake until chicken reaches 165 degrees Fahrenheit (around 25 minutes).

  5. Mix together brown rice, coconut flakes, lime juice, cilantro, and cashews.

  6. Serve rice mixture with chicken and broccoli.
